Explore the culinary traditions from the North of Africa showing a love of herbs, spice and fragrance and making use of pulses, grains, nuts and fruit to bring a bejewelled array of dishes. Observe, learn and taste a variety of dishes such as tagine, chicken with lemon and olives, couscous, tabbouleh and Tunisian citrus cake and gain ideas for applying the style of the region to your own cooking. Most recipes require just basic cooking skills and ingredients which are easily obtained.

The tutor will produce a range of dishes using the herbs, spices, pulses, grains, nuts and fruit used in this part of the world; this could include – tagine, chicken with lemon and olives, couscous, tabbouleh and Tunisian citrus cake. A demonstration course, with some opportunity for hands-on participation. There is an additional ingredients cost, usually between £4 – £6, payable to the tutor on the day.

Tutor – Karen Lawrence
I began teaching adults 20 years ago and before that, I taught Food and Nutrition in a secondary school. I have been teaching at Stoke Lodge for the last 5 years.
I have offered a range of courses over the years, but one that always remains popular is Vegetarian Cookery – I have gathered quite an assortment of recipes now!
I am currently developing my knowledge and recipe collection for gluten-free diets.
All courses are demonstration style, so that everyone can sit back, observe and then taste the results.
Groups are usually small and friendly and we all learn from each other – me included!
I love meeting so many interesting people on my courses, and I’m looking forward to meeting you!
