Cookery

We are delighted to be able to offer a exciting new range of courses from our refurbished Stoke Lodge Kitchen. Some of our courses are a mixture of hands on an demonstration and some are fully hands on.  Groups are small (we are a beautiful but compact space!)

Cookery 

Middle Eastern Mezze   

A course consisting of demonstration and hands on practice to create tasty little dishes for sharing. Some examples of dishes we will make are Hummus with sumac, roasted beetroot with za’atar, lamb kefte.  Please bring containers to take all the dishes home.

Breads 1 – Savoury and Sweet   

A course consisting of demonstration and hands on practice to create sweet and savoury breads such as flatbreads, pitta bread, savoury and spicy corn and chilli muffins, a sweet treat and a healthy loaf.  Please bring containers to take all the dishes home.

Breads 2 – Savoury and Sweet   

Inspiration, recipes and hands on practice to create sweet and savoury breads, muffins, and buns We will be making a selection of the following breads; a simple white loaf; Basil, garlic and cheese twists; stollen buns; cornbread muffins with olives, lemon and thyme; watercress scones; courgette loaf; cheesy soda farls.  Please bring containers to take all the dishes home.

Vegetarian Christmas Dishes  

Inspiration, recipes and hands on practice to create a range of dishes for a vegetarian Christmas. We will be making a selection of the following: Bourguinonne of chestnut, mushroom and garlic; Christmas Lentil loaf with mushroom gravy; spiced parsnip soup; mushroom wellington; cranberry and pistachio bread.  Please bring containers to take all the dishes home.

Pastry – Savoury and Sweet   

A course consisting of demonstration and hands on practice to create a range of sweet and savoury pastry dishes, such as tart tatin, goats cheese tartlets, chocolate fudge profiteroles.

Food & Mood   

This course is for anyone who is interested in exploring the relationship  between diet  ‘the role of carbohydrates and proteins for mental wellbeing’   and the brain and mental health. We will look at how the nerve cells of the brain work; the role of carbohydrates and proteins for mental wellbeing. We will cook a range of mood boosting dishes to take home or eat in class.  Please bring containers to take all the dishes home.
